Apple Cinnamon Coffee Cake Recipe
This apple cinnamon coffee cake recipe came from the US to Brazil in the 80’s with my stepmother. Try this one with a top Brazilian Mojo.
My parents have friends in Mobile, Alabama. My father met Uncle Mitchel way back in the 60’s when they both worked in Pará, north of Brazil. Uncle Mitchel and his family went back to Alabama, but they remained friends.
One day, returning from a trip to visit them, my parents brought this recipe that we never stopped making. It is a perfect match for Brazilian coffee.
Ingredients
- margarine, butter, or cooking spray
- 1 tbsp of flour, or as needed
for greasing:
- 1/4 cup of butter, softened
- 3/4 cup of brown sugar
- 1 large egg
- 1/4 cup of sour cream
- 1/4 cup of vanilla yogurt
- 1/2 tsp of vanilla extract, or to taste
- 1/2 tsp of maple extract, or to taste
- 1 cup of all-purpose flour
- 2/3 tsp of ground cinnamon, or to taste
- 1/2 tsp of baking soda
- 1/4 tsp salt
- 2 cups of diced Granny Smith apple
for the Cake:
- 1/4 to 1/3 cup of brown sugar
- 1/4 cup of all-purpose flour
- 2 tbsp of butter
- 2/3 tsp of ground cinnamon, or to taste
for the Topping:
Instructions
- Preheat oven to 350 deg F (175 deg C).
- Grease and dust an 8-inch square baking dish.
- In a large bowl, beat 1/4 cup of butter with 3/4 cup brown sugar w/ an electric mixer until light and fluffy.
- Beat egg into butter mixture.
- Add sour cream, vanilla yogurt, and vanilla extract to the mixture.
- Beat to mix.
- Stir 1 cup of flour, 2/3 teaspoon cinnamon, baking soda, and salt together in a bowl.
- Add to the butter mixture and beat to agregate into a batter.
- Fold apples into the batter.
- Pour batter into prepared baking dish.
- Mix 1/4 cup of brown sugar, 1/4 cup of flour, 2 tablespoons of butter, and 2/3 teaspoon of cinnamon in a bowl using a fork until crumbly.
- Sprinkle over the batter.
- Bake in the preheated oven until it passes the fork/toothpick test, (about 35 to 40 min)
- Let it cool for 10 minutes inside the dish before moving to a wire rack.
After tasting this wonderful recipe, I demanded that my wife should change our weekly afternoon cake to this option.

That coffee cake sounds amazing. I am also interested to try some Brazilian coffee now! I love the history and geography of coffee you give here. The story of the first discovery of coffee by the shepherd is always interesting.
